Zucchini Bread

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour (260 grams)
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • teaspoons ground cinnamon
  • teaspoon ground nutmeg

Wet Ingredients

  • 2 cups packed grated zucchini, grated on large holes of box grater and not wrung out
  • 2 large eggs
  • cups neutral or olive oil (160 ml)
  • ½ cup dark brown sugar, packed (95 grams)
  • ½ cup granulated sugar (100 grams)
  • 1 teaspoon vanilla
  • 1 teaspoon fine sea salt
  • 2 tablespoons turbinado or raw sugar

Instructions

  • Preheat oven to 350℉.
  • Grease 9"x5" (6-cup) loaf pan. Line with parchment paper. Grease paper.
  • In medium bowl, mix together dry ingredients (flour, baking soda, baking powder, cinnamon, and nutmeg).
  • In large bowl, mix together wet ingredients (zucchini, eggs, oil, sugars, vanilla, and salt).
  • Add dry ingredients to wet ingredients. Mix until well combined.
  • Place batter in loaf pan.
  • Sprinkle turbinado sugar on top of batter.
  • Bake until firm to touch and cake tester comes out clean, approximately one hour.
