Pita Bread

Ingredients

  • 1 cup warm water
  • 2 teaspoons yeast
  • ½ teaspoon granulated sugar
  • 3 cups all-purpose flour
  • 2 tablespoons extra virgin olive oil
  • 1 ½ teaspoons kosher salt

Instructions

Prepare dough

  • Add water, yeast, and sugar to large bowl. Stir to combine.
  • Add ½ cup flour to mix. Whisk together.
  • Let sit uncovered for 15 minutes.
  • Add olive oil, salt, and 2 cups of flour.
  • Stir with wooden spoon until dough starts to come together.
  • Sprinkle a little flour on top, then knead in bowl until dough starts to form a ball, approx. 1 minute.
  • Turn dough onto floured surface or pastry cloth.
  • Knead for 2 minutes.
  • Cover for 10 minutes.
  • Knead for 2 minutes more, adding flour only as needed.
  • Place in clean mixing bowl.
  • Cover with plastic wrap and then kitchen towel.
  • Let sit until dough has doubled, approx. 1 hour.

Prepare individual pita breads

  • Place pizza stone in oven, if you have one.
  • Preheat oven to 515° F.
  • Divide dough into 6 pieces.
  • Roll each piece into a ball.
  • Cover and let sit for 10 minutes.
  • One dough ball at a time, shape ball into a disc, being careful not to press out all the air.
  • Finish by using rolling pin to roll disc into flat 7-8 inch disc about ⅙ to ¼ inch thick.

Bake pitas

  • When first disc in rolled out, place it on pizza stone.
  • Bake until the pita just starts to brown, about 2 to 2 ½ minutes, then flip and bake for 1 to 1 ½ minutes more.
  • Remove from oven and cover with towel while other pitas bake.
  • If you have a large enough baking surface, you can bake several pitas at once.
  • Cover baked pitas until ready to serve.
