Mark’s Brisket

Equipment

  • Large roasting pan

Ingredients

  • 1 large brisket, 7-8 pounds
  • 2 large onions, chopped
  • 6 cloves garlic, pressed or chopped finely
  • 2 green peppers, chopped
  • 2 tablespoons Worchestershire sauce
  • 1 bottle Heinz Chili Sauce
  • 1 can beer, stale, or 12 ounces red wine
  • 1 pound carrots, cut in slices
  • 1 package Lipton's onion soup mix
  • coarse kosher salt
  • freshly ground black pepper
  • 6 ounces chicken stock

Instructions

  • Preheat oven to 350° F.
  • Place chopped onions in bottom of roasting pan.
  • Rub brisket with garlic.
  • Place brisket in roasting pan on top of onions.
  • Place remaining ingredients in roasting pan.
  • Place in oven and cook, covered, for 45 minutes at 350° F.
  • After 45 minutes, reduce heat to 275° F.
  • Continue to cook until tender, for up to 6 hours.
  • Remove from oven, cool ½ hour, and then slice across the grain.
