Olive Oil Brownies with Sea Salt
Equipment
- 8"x8" square baking pan
- Parchment paper
Ingredients
- 6 tablespoons extra virgin olive oil, plus extra for greasing pan
- 1 cup King Arthur unbleached all-purpose flour (130 grams)
- ¾ teaspoon kosher salt
- ¼ teaspoon baking powder
- ¼ cup cocoa powder (25 grams)
- ¼ cup boiling water
- 3 ounces melted unsweetened chocolate
- 1 large egg, room temperature
- 1 tablespoon vanilla extract
- ¾ cup packed brown sugar (165 grams)
- ⅓ cup granulated sugar (65 grams)
- ½ cup chocolate chips (90 grams)
- Flaky sea salt
Instructions
- Preheat oven to 350° F.
- Grease 8"x8" square baking pan with olive oil.
- Line pan with parchment paper, leaving overhang on 2 sides to make it easy to remove brownies from pan.
Prepare batter
- In medium bowl, whisk together flour, salt, and baking powder.
- In large bowl, whisk together cocoa powder and boiling water until smooth.
- To cocoa power mixture, whisk in 6 tablespoons oil, melted chocolate, egg, and vanilla.
- To chocolate mixture, whisk in brown and granulated sugars.
- Fold in flour mixture.
- Fold in chocolate chips.
Bake
- Scape batter into prepared pan, smoothing on top.
- Bake until set and firm to touch, approx. 40 minutes.
- Remove from oven.
- While brownies still are warm, sprinkle with flaky salt.
- Let cook.
- Remove from pan, cut into 16 squares, and serve.
