  • large cast iron frying pan

Ingredients

  • ½ loaf French country loaf or similar bread
  • 1 head garlic
  • extra virgin olive oil
  • coarse salt
  • freshly ground pepper

Instructions

  • Cut the bread into ¾ to 1 inch cubes. If you have time, set cubes of bread aside to get stale.
  • Separate head of garlic into cloves. Peel the cloves and cut them into large pieces.
  • Add enough oil to frying pan to cover the bottom approx. ⅛ inch deep.
  • Add salt and pepper to taste. I usually put in appox. ½ teaspoon salt and several grinds of pepper.
  • Heat oil over low to medium heat.
  • As oil is heating, add bread cubes.
  • Stir cubes to coat with oil. If the bread is dry, and more oil. Be generous with the oil.
  • Cook over low heat, stirring regularly, until croutons are golden and crisp.
