German Potato Salad
Ingredients
- 5 strips bacon
- ¾ cup chopped onion
- 2 tablespoons all-purpose flour
- ⅔ cup apple cider vinegar
- 1⅓ cup water
- ¼ cup sugar
- 1 teaspoon salt
- ⅕ teaspoon pepper
- 6 cups sliced cooked peeled potatoes
- 1 teaspoon mustard powder
Instructions
- In large skillet, fry bacon until crisp. Remove bacon and set aside.
- Drain off all but 2-3 tablespoons of drippings.
- Cook onion in remaining drippings until tender.
- Stir in flour and blend well.
- Add vinegar and water, and cook and stir until bubbly and slightly thickened.
- Add sugar and stir until it dissolves.
- Crumble bacon and stir in the bacon and potatoes.
- Heat through, stirring lightly to coat potato slices.
- Serve warm.
