Betti’s Garlic Smashed Potatoes

Ingredients

  • 3 pounds small round potatoes (such a Yukon Gold)
  • 1 tablespoon coarse kosher salt
  • 8 tablespoons unsalted butter
  • 6 cloves garlic, grated on a microplane
  • 1 cup parsley, chopped

Instructions

  • Wash potatoes.
  • Put potatoes in a pot and cover with water at least 2 inches above potatoes.
  • Bring to boil. Boil until tender.
  • Drain potatoes.
  • Preheat over to 425° F.
  • Melt butter in frying pan.
  • Add garlic to butter. Saute over low heat until golden brown.
  • Turn off heat and add parsley to butter.
  • Put butter mixture in large bowl.
  • Once potatoes are cooked, drain and add to bowl with butter mixture.
  • Toss to coat.
  • Place potatoes on oiled baking sheet. Spread them out into a single layer.
  • With flat bottomed glass (or similar), gently smash each potatoes individually to flatten somewhat.
  • Bake for 10 minutes.
  • Serve.
