Mashed Potatoes

Equipment

  • Steamer
  • Food mill

Ingredients

  • 1 head garlic
  • olive oil
  • Yukon Gold or russet potatoes
  • coarse Kosher salt
  • Butter, cream cheese, cream, whole milk, or similar

Instructions

  • Heat oven to 350°.
  • Slice top of head of garlic, so ends of garlic cloves are exposed. Encase head of garlic in aluminum foil. Pour olive oil into head of garlic until it just reaches the tops of the cloves. Seal foil and bake package until garlic is soft.
  • Peel potatoes. As you peel them, place potatoes in bowl of cold water to prevent them from browning.
  • Place water in steamer, making sure water stays below potatoes. Place potatoes in steamer. Steam until tender.
  • Meanwhile, remove roasted garlic cloves from their skins and mash them lightly.
  • Run steamed potatoes through food mill, letting milled potatoes fall directly into a pan or bowl.
  • Place your choice of butter, cream, etc. into microwavable bowl. Heat until butter is melted.
  • Add melted butter etc. to milled potatoes, along with mashed roasted garlic and a generous amount of salt. Stir to combine. Serve.
