Lohikeitto (Finnish Salmon Dill Soup)

Ingredients

  • 4 tablespoons unsalted butter
  • 1 leek, sliced (white and light green parts only)
  • 5 cups stock (chicken or fish)
  • 1 carrot, sliced
  • 1 pound potatoes, cut into ½-inch cubes
  • 2 bay leaves
  • 8-10 allspice berries
  • 1 pound salmon filet, de-boned, de-skinned, and cut into small chunks
  • 1 cup heavy cream
  • 1 cup fresh dill, finely chopped
  • salt and pepper to taste

Instructions

  • Melt butter in a pot.
  • Add sliced leek and saute until translucent, approx. 7 minutes.
  • Add stock, carrot, potatoes, and spices.
  • Bring to boil. Cook approx. 10 minutes over medium heat. At this point, potatoes should be almost ready.
  • Add salmon chunks and cream.
  • Cook 5-7 minutes more, until soup starts to boil.
  • Turn off heat. Add dill, salt, and pepper.
  • Cover and wait ten minutes before serving.
