Lohikeitto (Finnish Salmon Dill Soup)
Ingredients
- 4 tablespoons unsalted butter
- 1 leek, sliced (white and light green parts only)
- 5 cups stock (chicken or fish)
- 1 carrot, sliced
- 1 pound potatoes, cut into ½-inch cubes
- 2 bay leaves
- 8-10 allspice berries
- 1 pound salmon filet, de-boned, de-skinned, and cut into small chunks
- 1 cup heavy cream
- 1 cup fresh dill, finely chopped
- salt and pepper to taste
Instructions
- Melt butter in a pot.
- Add sliced leek and saute until translucent, approx. 7 minutes.
- Add stock, carrot, potatoes, and spices.
- Bring to boil. Cook approx. 10 minutes over medium heat. At this point, potatoes should be almost ready.
- Add salmon chunks and cream.
- Cook 5-7 minutes more, until soup starts to boil.
- Turn off heat. Add dill, salt, and pepper.
- Cover and wait ten minutes before serving.
