Turkey Roasted in Pizza Oven

Our oven in a outdoor, 42" interior diameter, fire brick parabolic dome. It is well enough insulated that the outside surfaces never get hot.

Equipment

  • Jelly roll pan

Ingredients

  • 1 turkey, free range or heritage
  • 1 recipe Stuffing for Turkey, adjusted to size of turkey
  • white wine for basting

Instructions

  • Heat pizza oven for approximately 3 hours.
  • Cool oven down until interior temperature is approximately 450°, about 1¼ hours.
  • Meanwhile, stuff turkey and salt the skin of the turkey.
  • Place stuffed turkey on rack on jelly roll pan. (Do not use a traditional roasting pan. If you do, the turkey below the edge of the pan will barely cook at all.)
  • Place turkey in oven, close oven door and roast, basting regularly with white wine, until internal temperature of stuffing is at least 165°.
