Zucchini Bread
Ingredients
Dry Ingredients
- 2 cups all-purpose flour (260 grams)
- ¾ teaspoon baking soda
- ½ teaspoon baking powder
- 1¼ teaspoons ground cinnamon
- ⅛ teaspoon ground nutmeg
Wet Ingredients
- 2 cups packed grated zucchini, grated on large holes of box grater and not wrung out
- 2 large eggs
- ⅔ cups neutral or olive oil (160 ml)
- ½ cup dark brown sugar, packed (95 grams)
- ½ cup granulated sugar (100 grams)
- 1 teaspoon vanilla
- 1 teaspoon fine sea salt
- 2 tablespoons turbinado or raw sugar
Instructions
- Preheat oven to 350℉.
- Grease 9"x5" (6-cup) loaf pan. Line with parchment paper. Grease paper.
- In medium bowl, mix together dry ingredients (flour, baking soda, baking powder, cinnamon, and nutmeg).
- In large bowl, mix together wet ingredients (zucchini, eggs, oil, sugars, vanilla, and salt).
- Add dry ingredients to wet ingredients. Mix until well combined.
- Place batter in loaf pan.
- Sprinkle turbinado sugar on top of batter.
- Bake until firm to touch and cake tester comes out clean, approximately one hour.
