Green Tea Lamb Chops
Ingredients
- 4 lamb chops
- 3 teaspoons loose green tea leaves
- ½ tablespoon cumin seeds
- ¼ teaspoon black peppercorns
- ¾ teaspoon aleppo pepper
- ½ teaspoon coarse kosher salt
- 2 cloves garlic
- ⅓ cup olive oil plus 1 tablespoon
Instructions
- Toast cumin seeds.
- Crush tea, spices, salt, and garlic in a mortar until fine. combine with olive oil.
- Rub mixture on chops to coat.
- Marinate at room temperature at least 1 hour or in the refrigerator overnight.
- Heat 1 tablespoon oil olive in sauté pan over medium high heat until oil shimmers. Place chops in pan and cook for 2 minutes. Turn, cook 2 minutes more, remove from heat, and serve.
