Italian Almond Paste Cookies

Ingredients

  • 8 ounces almond paste (such as Solo)
  • ½ cup granulated sugar
  • 2 egg whites
  • sliced almonds
  • dark chocolate
  • sprinkles

Instructions

  • Preheat oven to 350℉.
  • In a food processor, combine almond paste and sugar until well mixed.
  • Add eggs whites and mix. The dough should be creamy.
  • Remove dough from food processor and shape into strips.
  • Roll strips in sliced almonds.
  • Line cookie sheet with parchment paper.
  • Shape strips into crescents. Place crescents on cookie sheet.
  • Bake until golden, about 15 minutes.
  • Let cookies rest until cool.
  • Meanwhile, melt chocolate.
  • Dip cookies in chocolate and add sprinkles.
