Apple Crisp

Equipment

  • 9"x9" baking pan

Ingredients

  • butter for greasing baking pan

Filling

  • ½ lemon, zested and juiced
  • ½ cup brown sugar, packed
  • 2 teaspoons cinnamon
  • ½ teaspoon freshly grated nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 3-4 apples, approx. 4 cups once sliced

Topping

  • ½ cup King Arthur unbleached all-purpose flour
  • ½ cup granola or rolled oats
  • 4 tablespoons unsalted cultured butter, cut into small cubes
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • ½ cup chopped pecans

Instructions

  • Preheat oven to 350° F.
  • Butter 9"x9" baking pan.

Prepare filling

  • Combine lemon zest and juice, brown sugar, cinnamon, nutmeg, cloves, and salt in large mixing bowl.
  • Peel apples. Cut peeled apples in half and remove cores, stems, and remaining peel.
  • Cut apples halves in half again, then cut into slices approx. 3/8" thick.
  • Add apples to sugar mix and toss to coat.

Prepare topping

  • Place flour, oats or granola, butter, sugar, and cinnamon in medium mixing bowl.
  • Rub mixture together with fingertips to blend, breaking up clumps of brown sugar and flattening and coating pieces of butter. Continue rubbing and flattening until mixture is well combined.
  • Stir in chopped nuts.

Assemple crisp

  • Scrape apple mix into baking pan.
  • Cover with topping.

Bake

  • Bake crisp approx. 60 minutes, until apples are tender, filling is bubbling, and topping has browned.
