Apple Crisp
Equipment
- 9"x9" baking pan
Ingredients
- butter for greasing baking pan
Filling
- ½ lemon, zested and juiced
- ½ cup brown sugar, packed
- 2 teaspoons cinnamon
- ½ teaspoon freshly grated nutmeg
- ¼ teaspoon ground cloves
- ½ teaspoon salt
- 3-4 apples, approx. 4 cups once sliced
Topping
- ½ cup King Arthur unbleached all-purpose flour
- ½ cup granola or rolled oats
- 4 tablespoons unsalted cultured butter, cut into small cubes
- 2 tablespoons brown sugar
- ½ teaspoon cinnamon
- ½ cup chopped pecans
Instructions
- Preheat oven to 350° F.
- Butter 9"x9" baking pan.
Prepare filling
- Combine lemon zest and juice, brown sugar, cinnamon, nutmeg, cloves, and salt in large mixing bowl.
- Peel apples. Cut peeled apples in half and remove cores, stems, and remaining peel.
- Cut apples halves in half again, then cut into slices approx. 3/8" thick.
- Add apples to sugar mix and toss to coat.
Prepare topping
- Place flour, oats or granola, butter, sugar, and cinnamon in medium mixing bowl.
- Rub mixture together with fingertips to blend, breaking up clumps of brown sugar and flattening and coating pieces of butter. Continue rubbing and flattening until mixture is well combined.
- Stir in chopped nuts.
Assemple crisp
- Scrape apple mix into baking pan.
- Cover with topping.
Bake
- Bake crisp approx. 60 minutes, until apples are tender, filling is bubbling, and topping has browned.
