Butterball Cookies

Ingredients

  • 8 tablespoons butter
  • 3 tablespoons honey
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • 1 tablespoon vanilla extract
  • 1 cup pecans, chopped moderately fine
  • ¾ cup confectioners' sugar

Instructions

  • Preheat oven to 350℉.
  • Line cookie sheet with parchment paper.
  • In stand mixer fitted with paddle, cream butter until light and fluffy. Beat in honey, then flour and salt, then vanilla, and finally nuts.
  • Wrap dough and chill for at least 1 hour.
  • Form balls by hand, about the size of quarters, and place 2 inches apart on cookie sheet.
  • Bake 35-40 minutes, then remove from oven.
  • As soon as the cookies are cook enough to handle, roll each cookie in confectioners' sugar.
  • Allow cookies to cook, then roll again in sugar.
