Preheat oven to 350℉.
Line cookie sheet with parchment paper.
In stand mixer fitted with paddle, cream butter until light and fluffy. Beat in honey, then flour and salt, then vanilla, and finally nuts.
Wrap dough and chill for at least 1 hour.
Form balls by hand, about the size of quarters, and place 2 inches apart on cookie sheet.
Bake 35-40 minutes, then remove from oven.
As soon as the cookies are cook enough to handle, roll each cookie in confectioners' sugar.
Allow cookies to cook, then roll again in sugar.
