Erica’s French Vinaigrette

Ingredients

  • ½ teaspoon coarse kosher salt
  • 6 grinds fresh black pepper
  • 1 pinch sugar
  • 1 ½ tablespoons sherry or champagne vinegar
  • 1 tablespoon smooth Dijon mustard
  • 6 tablespoons extra virgin olive oil

Instructions

  • Put salt, pepper and sugar in small bowl.
  • Add vinegar.
  • Whisk in mustard.
  • Slowly add oil, 1 tablespoon at a time, while whisking to emulsify.
  • When emulsified, taste. If tastes too sharp, add a little more olive oil.
