Erica’s French Vinaigrette
Ingredients
- ½ teaspoon coarse kosher salt
- 6 grinds fresh black pepper
- 1 pinch sugar
- 1 ½ tablespoons sherry or champagne vinegar
- 1 tablespoon smooth Dijon mustard
- 6 tablespoons extra virgin olive oil
Instructions
- Put salt, pepper and sugar in small bowl.
- Add vinegar.
- Whisk in mustard.
- Slowly add oil, 1 tablespoon at a time, while whisking to emulsify.
- When emulsified, taste. If tastes too sharp, add a little more olive oil.
