Erica's French Vinaigrette
Ingredients
½
teaspoon
coarse kosher salt
6 grinds fresh black pepper
1
pinch
sugar
1 ½
tablespoons
sherry or champagne vinegar
1
tablespoon
smooth Dijon mustard
6
tablespoons
extra virgin olive oil
Instructions
Put salt, pepper and sugar in small bowl.
Add vinegar.
Whisk in mustard.
Slowly add oil, 1 tablespoon at a time, while whisking to emulsify.
When emulsified, taste. If tastes too sharp, add a little more olive oil.
