Payam’s Gazpacho

Ingredients

  • 3 large tomatoes
  • 1 red or green pepper
  • 1 cucumber
  • 1 cup celery
  • ½ cup green onions
  • 4 cups tomato juice
  • 5 tablespoons red wine vinegar (more to taste)
  • 5 tablespoons extra virgin olive oil
  • 15 ounces chicken stock
  • juice of 1 lemon
  • salt and pepper (to taste)

Instructions

  • Chop all vegetables.
  • Add liquids and seasonings and combine.
  • To give the soup body, blend a little of the combined ingredients and add back to soup.
