Payam’s Gazpacho
Servings 8 servings
Ingredients
- 3 large tomatoes
- 1 red or green pepper
- 1 cucumber
- 1 cup celery
- ½ cup green onions
- 4 cups tomato juice
- 5 tablespoons red wine vinegar (more to taste)
- 5 tablespoons extra virgin olive oil
- 15 ounces chicken stock
- juice of 1 lemon
- salt and pepper (to taste)
Instructions
- Chop all vegetables.
- Add liquids and seasonings and combine.
- To give the soup body, blend a little of the combined ingredients and add back to soup.
