Fresh Horseradish

- Food processor
Ingredients
- 1 6-inch long horseradish root (8 ounces)
- ½ cup white, white wine, champagne, or rice wine vinegar
- ⅛ teaspoon salt
Instructions
- Peel horseradish and cut into chunks.
- Put in food processor with ¼ the vinegar and ⅛ teaspoon salt.
- Process, scraping down sides occasionally, until finely minced.
- As you stop to scrape down the sides, add more vinegar as needed. You might use up to the full amount, depending on the age and condition of the root.
- Taste and add more vinegar and salt as needed.
- Store in refrigerator. Horseradish will keep almost indefinitely, getting milder with age.
