Fresh Horseradish

Ingredients
1
6-inch long horseradish root
(8 ounces)
½
cup
white, white wine, champagne, or rice wine vinegar
⅛
teaspoon
salt
Instructions
Peel horseradish and cut into chunks.
Put in food processor with ¼ the vinegar and ⅛ teaspoon salt.
Process, scraping down sides occasionally, until finely minced.
As you stop to scrape down the sides, add more vinegar as needed. You might use up to the full amount, depending on the age and condition of the root.
Taste and add more vinegar and salt as needed.
Store in refrigerator. Horseradish will keep almost indefinitely, getting milder with age.
