Fresh Horseradish

Equipment

  • Food processor

Ingredients

  • 1 6-inch long horseradish root (8 ounces)
  • ½ cup white, white wine, champagne, or rice wine vinegar
  • teaspoon salt

Instructions

  • Peel horseradish and cut into chunks.
  • Put in food processor with ¼ the vinegar and ⅛ teaspoon salt.
  • Process, scraping down sides occasionally, until finely minced.
  • As you stop to scrape down the sides, add more vinegar as needed. You might use up to the full amount, depending on the age and condition of the root.
  • Taste and add more vinegar and salt as needed.
  • Store in refrigerator. Horseradish will keep almost indefinitely, getting milder with age.
