Green Tea Lamb Chops

Ingredients

  • 4 lamb chops
  • 3 teaspoons loose green tea leaves
  • ½ tablespoon cumin seeds
  • ¼ teaspoon black peppercorns
  • ¾ teaspoon aleppo pepper
  • ½ teaspoon coarse kosher salt
  • 2 cloves garlic
  • cup olive oil plus 1 tablespoon

Instructions

  • Toast cumin seeds.
  • Crush tea, spices, salt, and garlic in a mortar until fine. combine with olive oil.
  • Rub mixture on chops to coat.
  • Marinate at room temperature at least 1 hour or in the refrigerator overnight.
  • Heat 1 tablespoon oil olive in sauté pan over medium high heat until oil shimmers. Place chops in pan and cook for 2 minutes. Turn, cook 2 minutes more, remove from heat, and serve.
