Maialino’s Olive Oil Cake

Ingredients

  • 1 cup almond flour
  • ¾ cup all-purpose flour
  • ¼ cup cornmeal
  • ¾ cup sugar
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup extra-virgin olive oil
  • 1 ¼ cup milk
  • 3 large eggs
  • 1 ½ tablespoons grated orange zest
  • ¼ cup fresh orange juice
  • ¼ cup citrus flavored liqueur (Grand Marnier, Triple Sec, Contreau, Tuaca, etc.)

Instructions

  • Preheat oven to 350° F.
  • Oil a 9-inch springform pan.
  • Line pan with parchment paper and oil the paper.
  • In bowl, whisk together flours, cornmeal, sugar, salt, baking soda, and baking powder.
  • In large bowl, whisk together olive oil, milk, eggs, orange juice, zest, and liqueur.
  • Add dry ingredients to wet ingredients and whisk until just combined.
  • Pour batter into prepared pan.
  • Bake until top is golden and tester comes out clean, approx. 1 hour.
  • Transfer cake to rack. Let cook for 30 minutes.
  • Run knife around edge of pan, invert cake onto rack, and let cool completely, approx. 2 hours.
