Maialino’s Olive Oil Cake
Ingredients
- 1 cup almond flour
- ¾ cup all-purpose flour
- ¼ cup cornmeal
- ¾ cup sugar
- 1 ½ teaspoons kosher salt
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 cup extra-virgin olive oil
- 1 ¼ cup milk
- 3 large eggs
- 1 ½ tablespoons grated orange zest
- ¼ cup fresh orange juice
- ¼ cup citrus flavored liqueur (Grand Marnier, Triple Sec, Contreau, Tuaca, etc.)
Instructions
- Preheat oven to 350° F.
- Oil a 9-inch springform pan.
- Line pan with parchment paper and oil the paper.
- In bowl, whisk together flours, cornmeal, sugar, salt, baking soda, and baking powder.
- In large bowl, whisk together olive oil, milk, eggs, orange juice, zest, and liqueur.
- Add dry ingredients to wet ingredients and whisk until just combined.
- Pour batter into prepared pan.
- Bake until top is golden and tester comes out clean, approx. 1 hour.
- Transfer cake to rack. Let cook for 30 minutes.
- Run knife around edge of pan, invert cake onto rack, and let cool completely, approx. 2 hours.
