Shen Choy

Ingredients

  • 16 bunches shen choy (red amaranth)
  • 1 head garlic, separated into cloves, cloves smashed with back of knife and peels removed
  • 3 tablespoons neutral oil
  • 1 splash tamari
  • 1 splash rice cooking wine

Instructions

  • In a large pan, heat oil. Add garlic and sauté until just starting to brown and crisp.
  • Add shen choy, tamari, and rice wine. Sauté until greens are barely wilted and liquids form a sauce.
  • Remove immediately from heat and transfer to serving dish.
