Shen Choy
Ingredients
- 16 bunches shen choy (red amaranth)
- 1 head garlic, separated into cloves, cloves smashed with back of knife and peels removed
- 3 tablespoons neutral oil
- 1 splash tamari
- 1 splash rice cooking wine
Instructions
- In a large pan, heat oil. Add garlic and sauté until just starting to brown and crisp.
- Add shen choy, tamari, and rice wine. Sauté until greens are barely wilted and liquids form a sauce.
- Remove immediately from heat and transfer to serving dish.
