Salmon Tartar

Ingredients

  • ½ pound sushi-grade salmon
  • 3 inches cucumber, peeled, seeded, and cut into small cubes
  • ¼ jalapeno chili pepper, seeded and minced
  • 1 scallion, thinly sliced
  • 1 clove, garlic, microplaned
  • ¼ inch ginger, microplaned
  • 1 ½ teaspoons neutral vegetable oil
  • juice from ½ lime
  • salt to taste

Instructions

  • Chill salmon in freezer until firm, 20-30 minutes.
  • Cut chilled salmon into ¼-inch small cubes.
  • Add remaining ingedients.
  • Toss together and serve immediately.
