Salmon Tartar
Ingredients
½
pound
sushi-grade salmon
3
inches
cucumber, peeled, seeded, and cut into small cubes
¼
jalapeno chili pepper, seeded and minced

scallion, thinly sliced
1
clove, garlic, microplaned
¼
inch
ginger, microplaned
1 ½
teaspoons
neutral vegetable oil
juice from ½ lime
salt to taste
Instructions
Chill salmon in freezer until firm, 20-30 minutes.
Cut chilled salmon into ¼-inch small cubes.
Add remaining ingedients.
Toss together and serve immediately.
