Crackers

Equipment

  • food processor fitted with metal blade
  • 2 baking sheets
  • Parchment paper
  • Pastry cloth
  • Rolling Pin
  • Pastry docker

Ingredients

  • 1 cup King Arthur unbleached all-purpose flour
  • 2 tablespoons butter or olive oil
  • ½ teaspoon kosher salt
  • ¼ cup water, plus extra as needed
  • toppings such as salt, sesame seeds, and chopped garlic

Instructions

  • Preheat oven to 400° F.
  • Line baking sheets with parchment paper.

Prepare dough

  • To food processor fitted with metal blade, add flour, butter or oil, and salt.
  • Pulse food processor until ingredeients are combined.
  • Add ¼ water.
  • Continue to run food processor until mixture holds together but is not sticky, adding water 1 teaspoon at a time as necessary.
  • Knead dough briefly to form a ball.
  • Cut ball into two equal pieces.

Prepare crackers

  • Roll first piece of dough on pastry cloth until approx. 1/16" thick, and slightly smaller than the baking sheet dimensions.
  • If you have a pastry docker, run the docker across the pastry multiple times, from various directions.
  • Place dough on baking sheet lined with parchment paper.
  • Sprinkle toppings of choice on the dough.
  • Roll rolling pin across toppings lightly several times, to press them lightly into dough.
  • Using pizza cutter or sharp knife, cut or score dough into squares or rectangles.
  • Repeat with second ball of dough.

Bake

  • Bake until lightly browned, approx. 10 minutes.
  • Let cool and then break apart into individual crackers.
