Ingredients

cup
King Arthur unbleached all-purpose flour
2
tablespoons
butter or olive oil
½
teaspoon
kosher salt
¼
cup
water, plus extra as needed
toppings such as salt, sesame seeds, and chopped garlic
Instructions
Preheat oven to 400° F.
Line baking sheets with parchment paper.
Prepare dough
To food processor fitted with metal blade, add flour, butter or oil, and salt.
Pulse food processor until ingredeients are combined.
Add ¼ water.
Continue to run food processor until mixture holds together but is not sticky, adding water 1 teaspoon at a time as necessary.
Knead dough briefly to form a ball.
Cut ball into two equal pieces.
Prepare crackers
Roll first piece of dough on pastry cloth until approx. 1/16" thick, and slightly smaller than the baking sheet dimensions.
If you have a pastry docker, run the docker across the pastry multiple times, from various directions.
Place dough on baking sheet lined with parchment paper.
Sprinkle toppings of choice on the dough.
Roll rolling pin across toppings lightly several times, to press them lightly into dough.
Using pizza cutter or sharp knife, cut or score dough into squares or rectangles.
Repeat with second ball of dough.
Bake
Bake until lightly browned, approx. 10 minutes.
Let cool and then break apart into individual crackers.
