Preheat frying pan.
Break matzoh into 1-inch pieces.
Soak matzoh pieces in water until soft, approx. 1 minute, and then drain.
Mix together eggs, milk, vanilla, and cinnamon. (The measurements for the milk, vanilla, and cinnamon are only approximate.)
Add egg mixture to matzoh and mix well.
Add butter to hot frying pan. (The measurement is approximate.)
When butter has melted and is bubbling, add matzoh mixture.
Mash matzoh mixture in.
Cook until brown, turn, and cook other side until brown.
Serve with syrup, yogurt, cinnamon sugar.
