Bring large pot of salted water to a brisk boil.
Remove chilled matzo ball mixture from refrigerator.
With wet hands, form mixture into matzo balls, approximately I inch in diameter.
Drop matzo balls into pot of boiling water.
Reduce heat, cover pot tightly, and simmer until cooked, approx. 30-40 minutes. Matzo balls should rise as they cook.
After matzo balls are done, transfer to pot of warm chicken soup
Serve in soup bowls with a few cooked carrot sticks in each bowl.
