Matzo Balls

Servings 8 matzo balls

Ingredients

  • 2 large eggs
  • 2 tablespoons chicken fat (in liquid form) or vegetable oil
  • ½ cup matzo meal
  • 1 teaspoon coarse Kosher salt
  • 2 tablespoons warm chicken broth or water

Instructions

Prepare mixture

  • In bowl, beat eggs slightly.
  • Add oil, matzo meal, and salt.  Blend together.
  • Add broth (or water) and mix until uniform.
  • Cover bowl and chill in refrigerator for at least 20 minutes.

Cook matzo balls

  • Bring large pot of salted water to a brisk boil.
  • Remove chilled matzo ball mixture from refrigerator.
  • With wet hands, form mixture into matzo balls, approximately I inch in diameter.
  • Drop matzo balls into pot of boiling water.
  • Reduce heat, cover pot tightly, and simmer until cooked, approx. 30-40 minutes.  Matzo balls should rise as they cook.
  • After matzo balls are done, transfer to pot of warm chicken soup
  • Serve in soup bowls with a few cooked carrot sticks in each bowl.
