Stand mixer with paddle attachment
Ingredients
2
large eggs
1
tablespoon
lemon juice
5
ounces
granulated sugar
12
tablespoons
unsalted cultured butter
1 ¾
cups
unbleached all-purpose flour
Instructions
In mixer bowl, combine eggs, lemon juice, and sugar.
Mix.
Add butter and beat at low speed.
Add flour and incorporate quickly.
Gather dough (which will be soft) in a ball, wrap in plastic, and refrigerate for at least one hour.
