Pâte Sucrée

Equipment

  • Stand mixer with paddle attachment

Ingredients

  • 2 large eggs
  • 1 tablespoon lemon juice
  • 5 ounces granulated sugar
  • 12 tablespoons unsalted cultured butter
  • 1 ¾ cups unbleached all-purpose flour

Instructions

  • In mixer bowl, combine eggs, lemon juice, and sugar.
  • Mix.
  • Add butter and beat at low speed.
  • Add flour and incorporate quickly.
  • Gather dough (which will be soft) in a ball, wrap in plastic, and refrigerate for at least one hour.
