Place croutons in large mixing bowl.
Melt butter in large frying pan.
Add giblets and saute for approx. 2 minutes.
Add onions and mushrooms. Saute until onions and mushrooms soften.
Scrape giblets, onions, and mushrooms along with any liquids into bowl with croutons.
Mix in cranberries, parsley, celery, eggs, salt, pepper, paprika, and nutmeg.
Stuff into bird.
